I must begin by saying that this was totally an experiment! I loved so much those no bake lemon slices I made a few weeks back that I wanted to basically slice-convert every cupcake recipe or flavour I could think of…
I started with cappuccino cause I thought it would mesh well with the biscuit base and oh my, were these successful! My fiancee raided the fridge before I had time to tell him I’d made them for a girls’ night (you know dinner, talk, wine, talk, talk, talk, cake!) and when I took them to the dinner my friends loved them… If you like coffee-flavoured desserts, then you definitely must try this one!
The recipe is very similar to the lemon slices but with changes to the icing:
INGREDIENTS
- 125g butter
- 300g pack milk Arrowroot biscuits (any Maria kind of cookie is good too, adds different flavour)
- 1/2 cup condensed milk
ICING
- 1 1/2 cups pure icing sugar
- 50g melted butter
- 1-2 table spoons of instant coffee (depends on how coffee-tasting you like your desserts!)
- 60gr of dark or milk chocolate for melting
- Some cocoa powder for decorating
Heat butter and condensed milk on a pan until it’s all well mixed. Crush the biscuits finely, and then mix it in with the condensed milk + butter mixture.
Press the dough into a tin lined with baking paper (or you can grease it too, I just prefer not to) and leave in fridge for an hour.
Melt the chocolate and spread it evenly on top of the biscuit dough.
For the icing, just combine the icing sugar, butter and instant coffee until it’s smooth and pasty. Pour or pipe on top of the base and done! I used some stencils and cocoa powder to decorate the slices but you can just pipe them with a nice design or spread the cocoa powder randomly.
