These are to die for! I found the recipe on Queen’s website but I made a few minor changes cause I prefer to use lemon rind than essence when possible…
INGREDIENTS
- 125g Butter
- 1 cup Desiccated Coconut (I’ve tried the recipe without coconut too and it’s very yummy! just add 50-60gr more of biscuits)
- 250g pack Milk Arrowroot biscuits (any Maria kind of cookie is good too, adds different flavour)
- Grated rind of 4 lemons
- 1/2 cup Condensed Milk
ICING
- 1 1/2 cups Pure Icing Sugar
- 20g melted Butter
- Grated rind of 1-2 lemon (depending on your taste, I like my slices lemony!!)
Heat butter and condensed milk on a pan until it’s all well mixed. Crush the biscuits finely, add the coconut if you want to (or just the biscuits) and then mix it in with the milk + butter mixture. Add grated lemon rind.
Press the dough into a tin lined with baking paper (or you can grease it too, I just prefer not to) and leave in fridge for an hour.
For the icing, just combine the icing sugar, butter and lemon rind until it’s smooth and pasty. Pour or pipe on top of the base and done!
